It's well known that Native Americans made use of every part of the bison. Resources were sometimes scarce on the prairie, so they made use of the meat, hair, fat, teeth, tail, bones, skin, horns, hooves, tendons, sinew, and organs. They even used bison dung for fuel.
The organs were some of the most valuable parts for nutrition. Organ meats are considered superfoods for the amount of nutrition contained within.
Bison Tongue is a delicacy and considered by Native Americans to be the best meat on the animal. Today, gourmet Chefs are rediscovering the flavorful uses for bison and beef tongue. Tongue makes a fantastic pulled meat for tacos, fajitas, sandwiches, etc., but can also be sliced and used as cutlets.
The Bison Tongue will arrive whole and raw WITHOUT corning or smoking of any sort. The skin is still on and will need peeled after you initially boil it or use your favorite technique.

Each Bison Tongue package will average 2 pounds. Every tongue is different.
NOTE: Please be aware there is a small segment of hard cartilage in the back of the tongue. Keep this in mind when preparing and serving.
